As it turns out, I am not one of the lucky ones who can happily sit down to a huge bowl of salad greens and chow down. If I find a salad I truly like it must have accessories. And when I say accessories I mean a very nice helping of cheese, nuts, balsamic vinegar, herbs and/or fruit among other things. I just cannot enjoy plain old lettuce like some people do (including my husband).

I recently discovered a stellar combination of these accessories and also figured out a way to ensure I would get a generous dose with each piece of lettuce. (more…)

Yet another tasty, healthy, flexible, and easy recipe to add to your files (no expensive juicer required)! These smoothies are a great addition to any breakfast or lunch, and leftovers stored in the fridge are surprisingly good the next day. The best thing about this recipe (probably thanks to the fact that a smoothie looks just like a milkshake) is that both of my daughters love them, and my pickier child ends up consuming fruits and vegetables that she would not normally eat. I had been making these for a while when one day I added the spinach, and it barely changed the taste.  I was so excited that I could easily get everyone (including me) to eat some fresh, raw spinach!

It’s no secret that I recently started perusing our local farmer’s market. These outings have left me with a variety of nutritious, tasty vegetables…that I often times have no idea what to do with! Which is exactly why I am so excited about this stir-fry recipe. I was able to use 5 of the items that I found at the farmers’ market in this one recipe – that is definitely a record! Plus, if you make the sauce yourself and serve it with brown rice, you end up with a delicious, healthy meal.
